Deep brining systems with large cages

Deep brining is the most commonly used brining system, where the cheeses are immersed in the brine in several layers one above the other and brought into the brine cage by flow.

A deep brining system with large cages is used for longer cheese brining times. Four to five cages are used per daily production. The storage capacity of a cage can vary from 10 to 40 tonnes.
The brine cage is moved up and down by means of a lifting unit.
The brine bath can be equipped with a circulation system, which ensures perfect brine condition. This circulation system works together with the system for salt dissolving, pH adjustment, filtration (both particle and micro-filtration) and buffering of brine.

Free swimming in and out
The cheeses swim in and out freely. Supply and discharge of cheese takes place through flow channels.

Orderly swimming in and out
The cheeses are led into the cage in rows, so that the position of each cheese is fixed. Input and output of cheese also takes place through flow channels. 

Depending on the chosen design, the deep brine systems are equipped with a track & trace system that is possible on batch, bin or cheese level.

The desired brine duration and spread in brine duration or the wish for container separation determine the choice of storage capacity of a brine cage.
