Deep brining system with small cages
Deep brining is the most commonly used brining system, where cheeses are immersed in brine in several layers one above the other.
Small brine cages are used for short brining times and/or when tray separation is desired.
Cheeses are brought into the brine cage by flowing into a loading station.
The brine cage is placed from the brine bath into the loading station by means of an overhead crane.An unloading station is provided for emptying a cage.
Both the loading and unloading stations have their own lift system.

The brine bath can be equipped with a circulation system, which ensures perfect brine condition. This circulation system works together with the system for salt dissolving, pH adjustment, filtering (both particle and micro-filtration) and buffering brine.
Cheeses can swim in and out in different ways. With a wide cage, cheeses swim in and out freely. Entry and exit of cheese takes place through flow channels.
If a wider cage is constructed in lanes, the cheeses can be guided into the cage in rows, so that the position per cheese is fixed. Supply and discharge of cheese also takes place here through flow channels.
Depending on the chosen model, the deep-brining systems are equipped with a track & trace system, which is possible at batch, bin or cheese level.
The desired brine duration, possible spread of brine duration or the wish to have container separation determine the choice of storage capacity of a brine cage.
